DESCRIPTION

Coffee “Santos” SFE by Firmenich is a natural extract of Coffea arabica L. obtained from coffee beans sourced from Sul de Minas, Brazil, one of the most important areas for Arabica coffee cultivation. Firmenich selects the coffee through a local supply chain involving small farms and harvesting cooperatives, with the aim of preserving the quality and aromatic identity of the raw material.

The raw material is processed using Supercritical Fluid Extraction (SFE), a technology that uses carbon dioxide CO₂ brought beyond its critical point, approximately 73 bar and 30 °C, acquiring supercritical fluid properties and allowing the aromatic components of coffee to be extracted at low temperature. This makes it possible to preserve the olfactory facets of the raw material with particular fidelity.

The result is an extremely interesting extract for modern perfumery: it does not only present the gourmand sweetness of coffee, but also conveys the roasted, phenolic, aromatic and freshly ground bean dimension typical of Arabica coffee. Firmenich describes it as intense and characteristic, but without pronounced bitterness, with an aromatic and fruity component that contributes to the naturalness of the accord.

PERFUMERY

Firmenich's Coffee Santos SFE develops a particularly realistic and complex coffee note.

The opening evokes freshly ground coffee, with an intense and dry aromatic component reminiscent of freshly crushed beans. Progressively, roasted, phenolic, warm and slightly woody facets emerge, accompanied by a subtle fruity dimension.

Its phenolic character is particularly useful when the aim is to evoke not only the beverage itself, but the aromatic world of roasted beans and ground coffee.

It can be used as a key element in a composition dedicated to coffee, or as a supporting material to introduce a dark, roasted and aromatic facet within more complex structures.

It is particularly interesting in coffee-gourmand accords, where it can be combined with vanilla, benzoin, tonka, cocoa, caramel, ethyl maltol and vanillin. In this context, it allows a natural and roasted coffee dimension to be created without making the accord exclusively sweet.

In amber and oriental compositions, it can instead be combined with labdanum, benzoin, amber, patchouli, ambery woods and musks, creating a dark and warm facet that enhances the depth of the base.

The combination with woods, leather and tobacco is also particularly interesting: the roasted and phenolic nuances of Coffee Santos can contribute to the construction of dark tobacco, warm leather, burnt wood and smoky material accords.

The aromatic and slightly fruity character of Arabica also allows it to be incorporated into fruity-gourmand accords, where it can create a particularly effective contrast with red fruits, plum, cherry, dark fruits and liquor-like notes.

SFE technology is particularly important from a formulation perspective because it makes it possible to obtain an extract that faithfully preserves the different natural facets of coffee, making it more interesting than a simple reconstruction using individual aroma molecules.
